The Science Behind Rice Storage

Rice, beloved and widely consumed, can be a tricky foodstuff when it comes to storage. Once cooked, rice can be a breeding ground for Bacillus cereus, a bacterium that causes food poisoning. This bacteria is heat-resistant and can survive cooking. If cooked rice is left at room temperature, the bacteria can multiply rapidly.

To ensure safety, we recommend cooling rice as quickly as possible after cooking. Spread it out on a wide, shallow dish to hasten cooling, then refrigerate within 1-2 hours. Remember, the key is to prevent the rice from staying in the “danger zone” of 5°C-60°C, where bacteria can thrive.
