Kicking off our program, Professor Jason Stokes from UQ took us through an exciting tour of food engineering … mouth-first!  What actually happens when we bite into food and the complex interactions of emulsions, saliva, viscosity, fibre-reactions and mouth feel that make the first 15 seconds an incredible experience!

Having whet our appetite, Kieren Brown from Ananda Food stepped up to share the fabulous story of home-grown, low THC, high nutrition HEMP foods!  The best oil, the best protein, the best smoothies, with new great flavours!  How to negotiate the law, protect your crop AND expand the mind and diets of food-savvy Australians!
